WELCOME!

*Bienvenidos. Benvenuto*

Welcome to The Unfolding Travels, your stylish passport to European travel with a special focus on Spain.

Here you can delight in off-the-beaten-path recommendations and hotels that make your stay truly memorable.

Planning a trip can be overwhelming, which is why Quality / Quantity is this site’s guiding mantra.  Bold and thoughtful design is often at the heart of what you’ll find here.

I’m Katie Sciortino Peak, writer, photographer & dESIGNER behind The Unfolding Travels.

From 2019 to 2023 I lived on the Northeast coast of Spain with my husband Rich.  We had the opportunity to explore the region and beyond and fell in love with the country!

After four years of researching, discovering and aggregating recommendations from friends and locals, I decided to create The Unfolding Travels to share my findings and my love for these places.

I hope you can find some inspiration for your next adventure!

BIO

I have a Master’s in Journalism from Northwestern University and degrees in Public Relations, International Affairs & Spanish from the University of Georgia.

After grad school I worked as an Associate Producer on “Oprah: Where Are They Now?” at Harpo Studios in Chicago and a Producer for History Channel series “Great Lake Warriors.”

Subsequently, I worked on the team at Second Line Stages for TV and film production in New Orleans, as well as, the National World War II Museum’s Stage Door Canteen Theater.  I went on to launch Katie Peak & Co., a collection of letterpress gifts based on original poetry that were sold in local boutiques, markets and online.

In 2019, I wrote and produced a demo of an original musical made for podcast, Walk with Me, in collaboration with Nashville composer Shawn Williams and a cast of New Orleans actors.  Since then I’ve written a series of audio scripts including “Twisted: A Cautionary Tale,” a satire, “The Windows,” a 10-episode psychological thriller and “Another Round,” a two-part musical comedy.  I hope to produce these shows in the future, so stay tuned! In the meantime, you can listen to a couple of travel audio documentaries I produced here.

In 2021, in collaboration with illustrator and friend Anna Tóth, we self-published the picture book Peg’s Parlor (story by me and illustrations by Anna).

“I would love to live like a river flows,
carried by the surprise of its own
unfolding.”
